# “Barbie Kraut” or “The Hungarian Woman From the Internet by Way of New Jersey” Barbecue-Flavored Sauerkraut⁣

## Ingredients⁣

### Hibiscus Molasses⁣

4 1 cups water⁣
1 1/4 cup sugar⁣ (Rohrohrzucker)
28 7 g dried hibiscus flowers⁣

### Sauerkraut⁣

5 lbs. shredded red cabbage⁣ – 408 gr. Weisskohl
– 1 packed cup thinly sliced tomatillos⁣
1 packed cup chopped onion⁣ – 1 rote Zwiebel
8 jumbo garlic cloves, crushed⁣ – 2 Knoblauchzehen
1/2 1/8 cup hibiscus molasses⁣
10 tsp. smoked salt⁣ – 10 gr. Rauchsalz

#### Spice Blend⁣

1/2 1/8 cup crushed dehydrated tomatoes⁣
2 fresh sage leaves, chiffonade⁣ – 1 dried sage leaf, chopped
2 large chipotles, crushed⁣ ½ chipotle mora
1 ¼ tbsp. paprika⁣
2 1/2 tsp. mustard powder⁣
2 1/2 tsp. ground cumin⁣
2 1/2 tsp. ground coriander⁣
2 1/2 tsp. turmeric powder⁣
1 1/2 tsp. roasted ground ginger⁣
1 1/4 tsp. cracked black pepper⁣
1/2 tsp. a pinch ground allspice⁣

## Method⁣

### Hibiscus Molasses⁣

Combine the water, sugar, and hibiscus flowers and bring them to a boil in a small, covered pot. Remove the pot from the heat and let it steep over night, then strain the flowers and reduce the sweetened tea to between 1 1/2 and 2 cups.⁣ – strain.

### Sauerkraut⁣

Place the cabbage, tomatillos, onion, garlic, and salt in a large bowl or stock pot. Mix well. While waiting for a brine to develop, prepare the spice blend. Add it and 1/2 1/8 cup of the hibiscus molasses to the sauerkraut and mix again throughly. Pack the sauerkraut into a 4-liter 0.5 liter jar and ferment in the usual manner for 2 weeks.

Goil. Nächstes Mal etwas weniger Cumin und evtl. Koriander, und unbedingt Rotkohl und Hibiskus benutzen! Frischer Ingwer & Kurkuma wär glaub auch gut.
